Wow, can you believe it’s the last week of October? Crazy how fast time goes!
Here’s what’s on the menu for this week:
Breakfast-toast, waffles(still in freezer), banana muffins(need to make some), cereal
Lunch-Baked potatoes with Broccoli(leftover from Monday night) and cheese, pb&j, grilled cheese, celery sticks, applesauce
Sunday-Scalloped potatoes and ham bake, salad, applesauce(homemade, in the freezer)
Monday-Chicken Parmesean, broccoli, bread
Tuesday-Enchilada Bake(made up because my soft shells all broke(I was impatient and they were still frozen) when I was trying to make quesadillas a week or so ago. I’m planning on layering hamburger mixed with salsa and a little sour cream with the broken shells then topping it with shredded monterey jack cheese. We’ll see how it tastes.)
Wednesday-Chicken Salad(diced, cooked chicken, chopped celery, craisins, mayo, and a dash of sugar) on mini bagels(in freezer), mixed
veggies, applesauce
Thursday-leftovers
Friday-Beef Stirfry over rice and strawberries(freezer)
Saturday-Mummy Wraps(Hotdogs & Cheese wrapped in a crescent roll), leftover mixed veggies, pumpkin cupcakes or cookies(depends on what Peyton and I make this week!) Happy Halloween!
