I’ve shared with you before that I sometimes have a hard time with side dishes. The main reason for this is my husband is a meat and potatoes man. He could do without veggies for the rest of his life….seriously.
Me on the other hand, I LOVE my fresh fruits and veggies. I think it’s partly because growing up we didn’t get them very often. Now that I’m on my own I’ll take fresh produce or frozen before canned.

One of my favorite simple, but delicious fresh salads I make for myself is a tomato and cucumber salad. It’s so simple and quick!
1 large cucumber
1 roma tomato(whatever kind you prefer, my mother-in-law uses cherry tomatoes)
Olive Oil
Salt & Pepper
Cut most of the peeling off the cucumber(I like to leave a little on the corners for color!) then slice it. Dice the tomato and add to the cucumber. Stir in a little olive oil(around 1tbsp) to taste and sprinkle with salt and pepper.
So incredible easy, fast, and yummy!

Peel and slice cucumber, add Cherub tomatoes, feta cheese and Goddess dressing. Mix and ready to eat.
