TO MY HUSBAND-IF YOU’RE READING THIS-PLEASE DON’T READ ANY MORE!!
Lately I’ve been trying to sneak add healthier foods into our meals. My husband can be picky due to some stomach issues(however if he doesn’t know they’re there he seems to be ok;)!-I love you honey!)(ok, really, stop reading!ha!)
So the other night I whipped up some smoothies. We love smoothies at our house, and I love knowing my husband and children are getting much needed nutrients. I had read somewhere you can put spinach in a smoothie and not even taste it. I HAD to try this!
Since spinach is green I opted to go with blueberries(assuming it would turn out an ok color-which it did(green & red spelled brown trouble and questioning looks on my husband’s face!)) I added some yogurt and a splash of orange juice(you know the last swallow in the carton that nobody seemed to want!). I have to say it was delicious!
My husband’s only complaint-too much yogurt.
Now, my next attempt is going to be adding some ground flaxseed into various breads/muffins/pancakes. That’s where I need your help. I’ve read that you can substitute flaxseed for egg in some recipes. Have any of you tried this or do you have some great recipes for me to try?
P.S. I’m sure some type of chocolate muffin would be a wonderful recipe!

My hubby is a meat and potatoes guy, and I’ve done the spinach smoothies before, and yes they are good! Once they’ve had a few that are non-offensive colors, I’ve made some very green colored ones too. I convinced my son that they were “hulk smash” juice and he drank it happily. If you use cranberry juice as a base it covers the green a lot too and makes it more red. spinach is by far the best, I’ve had it w/ romaine too and its to “lettuce-y”. a bit of broccoli works ok if you mix it up well.
I haven’t used flax as an egg substitute, but I’ve just added a scoop or to to pancakes or banana bread and my family hasn’t noticed (hope my husband isn’t reading this either!)… it just gives it a richer flavor i think with the extra fiber and nutrients.

I love flax seed and eat it every morning with my yogurt. I haven’t used it as an alternative in baking, but have heard a lot about it. I would try these suggestions –
