Whew, I felt like I didn’t leave my kitchen over the weekend! I’m so glad I kept plugging away and accomplished so much!
I started out realizing I didn’t have enough freezer bags so I ended up making an unplanned run to the Dollar Tree. Tip-make sure you have everything on hand!
It wasn’t such a big deal except it took a chunk out of the time the kids were napping. Once they woke up I fell way behind. Note to self: make sure the kids are playing with Daddy next time you freezer cook!
Here is what I managed to get in the freezer:
3 bags of chopped ham for soup, egg bake, scalloped potatoes, etc
1 meal of sliced ham with enough leftovers to make Hot Ham & Cheese
4 bags of browned hamburger for tacos, burritos, chili, spaghetti, etc
9 hamburger patties(3 meals)
6 2-packs of Sirloin Steaks
3 packs with 1 large Sirloin for stir-fry, fajitas, quesadillas
3 packages of Diced Potatoes(for sides, potato soup, etc)
3 packages of French Fries
1 side of mashed potatoes(we ended up eating one and freezing the other)
1 pan of Cinnamon Rolls(these were delicious-thanks Crystal!)
As I put stuff in the freezer I made sure I updated my freezer inventory so I know exactly what’s in the freezer. I also make sure I cross it off when I take it out-this helps me tremendously when I sit down to plan the menu!
I realized I didn’t have any oats for the granola so that is still on my list. We’ve been having cheese, crackers, and oranges for snacks lately instead of the granola. The Cinnamon rolls were amazing. I made one pan for Sunday morning and froze the other for next weekend. I ended up getting the egg bake put Sunday night so we had a couple of days for breakfast. My kids love it!
We moved the Corn Chowder to Monday night. We had corn on Saturday night so I could use any leftovers in the Corn Chowder. I also saved a cup and a half of chopped ham and 4 cups of diced potatoes to use in this recipe as well. I’ll post it later this week-it reminded me of a cheesy potato soup.
On another note-this freezer cooking put me way over my budget as far as the weeks go. As you can see I have a stocked freezer(I also have more meat in there from previous months) so I won’t have to buy much over the next month. I think I have around $10 to use each week until the 20th.
