Menu Plan February 21st-27th

I’ll try to post a couple recipes this week for some healthy snacks.  Here is what is on the menu(tentatively) for the week:

Breakfast-homemade cinnamon rolls, cold cereal, egg sandwiches, fruit, fresh oj

Lunch-leftovers, pb& j, grilled cheese, fresh veggies(carrots, red peppers, cucumbers), fruit, yogurt.

Sunday-Lemon Pepper Chicken, potato wedges, broccoli

Monday-Chicken & Rice Bake(use some leftover broccoli and chicken)

Tuesday-Mandarin Orange Chicken Salad with Asian Dressing, applesauce.
When I make this the kids will eat pieces of chicken, leftover broccoli(if there is any!), and the oranges as they won’t eat lettuce

Wednesday-Soup-I’ll either make a potato soup or chicken & rice & homemade bread(which I’m still experimenting with since I have to deal with high altitudes now!-any tips are greatly appreciated!)

Thursday-Tilapia, roasted potatoes, steamed carrots

Friday-Hamburgers, fries, mixed veggies

Saturday-Dine Out or Bring Something Home

On the high altitude – it’s something I had to adjust to as well when we moved to Cheyenne in June. Online you can find countless solutions but those usually tell you things like, “decrease sugar by 1 tbsp” or “increase water by 1 tsp.” None of those rules ever worked for me and I ended up with many failed baking attemps (and many tears!). The best thing that I’ve discovered? Adding about 1/8 – 1/4 c. flour (per cup that is called for in the recipe). Most recipes still end up denser than they normally should be at least that stops them from falling completely flat! :)

Some day when I become fixated on making a good yeast-risen loaf, I think I will pester the local bakeries until someone spills the beans. :-)

Hi there,
I have some GREAT bread recipes (specifically an American Test Kitchen Almost No Knead Bread recipe as well as my sandwich/sweet bread recipe that I use as my master recipe for cinn. rolls, dinner rolls, sandwich bread, etc. I use a kitchen scale/measure by weight. Let me know if you’d like them and I can email them to you! I live near DIA-which helps with knowing what altitude I’m using.

p.s. love your menu posts as well as your end-of-month grocery budget posts. You’re inspiring me to get back on track!!

Do you cook whole chickens a lot? Can you give us some recipes of how to cook it? I’m scared to do it, and don’t have a clue how to!

Yes, I just made one today.

Very simple! I cleaned the chicken and removed the pieces from the cavity, the patted it dry. Put it in the crockpot and add a few garlic cloves(optional) and 2 lemon halves into the cavity. I sprinkle it with seasonings-today I think I put lemon pepper, a little sea salt, and pepper-oh and Mrs. Dash. I add just enough water to barely cover the bottom of the crock-maybe a 1/4 cup. Let it cook on low for 4-6 hours(I put mine in at 8:30 this morning and we had it for lunch today at 12:30 then I turned it down to warm after another hour. Just before dinner I de-boned it and we had wraps for dinner. I have a quart sized bowl full of shredded chicken that I’ll use for recipes this week.
I also strained the broth and will cook the rice in that for the broccoli, chicken, rice bake.
Good luck! I’ve also seen and tried putting balls of foil under it(three-two infront and one in back) to prop it up a little. I honestly didn’t notice a difference so I save my foil for other uses! ;)

Lisa-
Another thing I do in the summer is put it in the crockpot for a couple hours then carefully move it to the grill and put BBQ sauce on it. We leave it on just long enough for the BBQ sauce to carmelize-it’s delicious!
My husband prefers doing this with drumsticks rather than the bird. I highly recommend starting them out in the crockpot regardless(just watch them so they aren’t falling apart too much). We’ve tried cooking them on the grill the entire time, but it takes quite a bit of time….quite a bit of propane as well!
