For some reason I did horrible sticking to the menu plan last week. We ended up having leftovers from Easter one night(and for lunch one day) and tuna melts another night. So you’ll see a few of the items from last week carried over to this week.
Breakfasts: Cereal, yogurt, bagels(freezer)
Lunch- Grilled Cheese, Leftovers, PB&J, Carrots, yogurt, smoothies
Sunday-Fish Fillets, Homemade fries, mixed veggies
Monday-Chicken Parmigiana(we didn’t have it last week), Broccoli
Tuesday-Shredded Beef Tacos, Rice, Side salad
Wednesday-Chicken, Broccoli, Rice Bake(using leftovers from the week)
Thursday-Leftovers
Friday-Date with my husband! Kids eat with Grandpa & Grandma!
Saturday-Out & About(if we are home we’ll throw some steaks on the grill)
My family is still pretty small so we don’t eat a ton at each meal. This makes it easy to stretch our meals out quite a bit. I’m loving Thursdays lately as we’ve been using up any and all leftovers!

Hi, impressed you are making homemade french fries. My mom always did and actually gave me a french fryer a couple years ago…sad to say I have never used it. Maybe you will motivate me to give it a try this week.

I actually don’t have to do any work when it comes time to making them. We bake them instead of fry them(my husband would love to have a fryer, but the one we got as a wedding gift crashed and I don’t want to replace it!-healthier if we don’t!) . I have the fries in the freezer ready to pop into the oven. Here is how I prepare them before they go to the freezer:

What a great idea for my potatoes! We always make homemade fries in the summer-but that often takes away from the “quick and easy” BBQ we are doing…and I’m always sad to pay higher prices for potatoes in the summer…I’m going to freeze them in advance as “fries-to-be”! Thanks!

I am so happy to have found you – I’m trying to keep our home food budget for a family of five (three kids ages 8-10) under $100 and it is so hard, but you’ve inspired me to get even more organized, especially around meals. We bake our fries as well and the kids love them – I slice them steak fry style and then put them on a foil lined pan with canola oil spray, then sprinkle garlic powder, salt and pepper and they fly off the plate!
