Monday- Taco’s, Beans and Rice- I am pacing myself with freezer cooking this week. I’ll divide a large pack (3-4 lbs of lean ground beef) and put some aside for the rest of the week’s meals. While I am working I will put together a meatloaf for Thurdsay and keep use the remaining cooked ground beef for Mexican Cornbread Casserole on Saturday and Lasagna on Sunday.
Tuesday-Chinese Chicken Salad-Using the Morningstar Star’s Chick’n from the Albertson’s sale, a bag of salad, a bag of shredded cabbage and a large can of mandarin oranges. Hopefully you have an Asian Sesame dressing in your stockpile just add wonton strips and sesame seeds. Kids might like this made into a wrap with a flour tortilla.
Wednesday- Frugal Dinner, Chicken Alfredo, California Mix Frozen Vegtables, Breadsticks

Ronzoni Rotini Pasta Free at King Soopers or Wacky Mac FREE from Albertson’s
Classico Alredo Sauce-Free from Safeway a few months ago

Thursday-Meatloaf, Mashed Potatoes & Peas
I’ll assemble the meatloaf on Monday while browning taco meat. I don’t really follow much of a recipe and just add eggs, breadcrumbs and seasonings until it looks right. I will defrost it in the fridge the night before and add tomato paste to the top just before cooking.
Friday- Veggie Chowder Soup and Cornbread- Remove bag you prepped last week from freezer and place in crock pot on low for about 6 hours with chicken broth, milk, flour. Add cheese just before serving and top with Bacon Bits and Green Onions.
Make 3 (or more) boxes of cornbread per package directions and save some for Mexican Cornbread casserole tomorrow night. Assemble casserole per recipe here: www.copykat.com
Saturday-Mexican Cornbread Casserole
If you prepared last night all you have to do is place in oven and add a salad. If not see recipe above. I usually make several trays of this at one time as it freezes well and makes for a really easy week night dinner.

If I am going to do all the work to make lasagna I try to make as many trays as possible. And it is nice to have one in the freezer to give if a friend or loved one gets sick or to take to a family with a new baby. And it makes you look so thoughtful….
