Taco Cornbread Casserole-Cheap and Easy Dinner

by erica on August 17, 2010

As promised earlier, here is a super cheap and easy dinner that you can make from your Morningstar Farm stockpile.

Ingredients

1 tablespoon taco seasoning
2/3 cup water
3/4 cup shredded Cheddar cheese
14 ounces creamed corn
1 box MorningStar Farms® Meal Starters™ Grillers® Recipe Crumbles™
1 box jalapeno cornbread mix

Directions

Preheat oven as directed on cornbread package.
Grease pan and place empty, greased pan in oven to heat while the rest of the ingredients are being prepared.
Place crumbles, taco seasoning and water in a skillet. Cook crumbles according to package directions and until most of the water has evaporated.
Mix cornbread according to instructions, then add the creamed corn to the cornbread batter.
Carefully remove the pan from the oven and pour in one-third of cornbread mixture.
Add the taco-seasoned crumbles and sprinkle Cheddar cheese over the top.
Add remaining cornbread batter and bake according to directions on the cornbread package.

This is 9 servings so you will probably have some left over for weekday lunches or maybe even enough for a second dinner if your family is small.  Check out more Morningstar recipes here:  www.morningstarfarms.com
