Giveaway Winners- 2 CookBooks from Once A Month Cooking

I am so excited to get to give these away.  I am totally sold on this method and love the fact that I have stacks of healthy meals at-the-ready in my freezer.  These recipes are all designed to be freezer friendly and even a less than stellar cook like myself can turn out a good meal. If you weren’t a winner this time you can take a look at the official website here:

I have tried to dedicate entire days to cooking for the month and it hasn’t worked out so well.  My boy usually sleeps for about an houf and a half so those are my pockets to get this done.  When he is awake there is absolutely nothing that can be done except chase him.  And forget about having five pots boiling on the stove-that’s a recipe for disaster at my house. I do a modified version normally doing one meat or type of dish per night.  For example last night I made the Taco Pie recipe from MorningStar.com (2 casseroles), Texas Lasagna from Once A Month Cooking, and prepared the ingredients and saved the leftover “meat” for burritos at some time in the next week.  I used four packs of Morningstar Farms, 1 can of diced chili’s, 1 can of creamed corn, 2 tortillas, 2 packages of cornbread, large bag of shredded cheese, taco seasoning, a can of tomatoes and a can of tomato sauce.  Most of these items were from my stockpile and were picked up for free or really cheap.  In an hour I was able to come up with four dinners, clean up and have that nights dinner on the table for about $3 a meal.  I thought the Taco Pie would show up again on leftover night because the recipe said it would be 8 servings.  Wrong!  My husband loved it and we all had seconds.  I have one last lonely piece to send over to my FIL and then no more Taco Pie until next week.  No one even noticed that it wasn’t real ground beef and I saved us a lot of fat calories.

Another site I am in love with is onceamonthmom.com. It is a similar principle but also includes breakfast, lunch and desserts.  The two authors are amazing organized and give you the ability to print labels and offer a new meal plan for every month.  Again, you might modify it a bit if the idea of cooking 90 meals at once unnerves you.  The site is also a great resource for homemade baby food.
