It looks like another busy week is upon us. I tried to let my husband take over Tuesday night’s cooking last week so I could work on the grocery ads. Kids ended up eating Trix for dinner. So this week we are going to plan a little better. I am trying to work in the Freezer Cooking Plan so that I have some easy, go to meals in the freezer. We are on a spending haitus and I will be working with only what is in the freezer and pantry.
Monday-I should have a few hours in the afternoon while the boy naps so I will prep tonights dinner and a few more. Today I will use chicken and will make “Chicken Spaghetti” for dinner and make extra for school lunch tomorrow. While I am in there I will also make a Chicken Pot Pie Casserole, A Broccoli, Chicken & Pasta Casserole, and Chicken- Veggie Cheese Soup. I am using the free Morningstar Chik’n Strips I got at Albertson’s and the free Ronzoni pasta from King Sooper’s so these will all be super frugal meals.
Tuesday- Heat up Texas Lasagna made last week, in freezer
Wednesday-Beef Stew-using a packaged mix from the pantry and the mystery meat that has been in the freezer for years. Wish me luck!
Thursday-Breakfast for Dinner- scrambled ham and eggs, hashbrowns-another super cheap dinner that the kids love and is easy to make
Friday-Hoping to get my man to grill some chicken and eat on the patio. If not we will use the frozen fish fillets in the freezer and I’ll make some mac and cheese.
Saturday-clean out leftovers
Sunday- Taste of Colorado- I can’t wait to have a night off from cooking!
And if I have followed through on the Freezer Cooking plan I will have some nice chicken dishes in the freezer for next week.
