Like many of you, I made a huge pot of chili in honor of the Superbowl today. What a nice treat to have simmering all day, making the house smell good while the snow is falling outside. But like everything else, I am chosing to multi-task with this and will stretch it out to get several meals from one cooking session. Here’s are some ideas for your leftover chili:
Taco Salads- add salsa, sour cream, lettuce, shredded cheese and tortilla chips to make a taco salad (or break up the taco shells if you got them free from Safeway this week)
Chili-Cheese dogs or burgers
Baked Potatoes topped with chili
Taco Soup
Mexican Cornbread Casserole

Fritos and chili on top with cheese
You can also spread them over tortilla chips. Place them in a cookie sheet, top with cheese and pico de gallo, bake and have some wonderful tasty nachos. (Add lettuce and jalapenos for extra flavor!)
Left over chili, delicious! I also made a pot of chili for superbowl Sunday. First, we had left over bowls of chili, then I made spaghetti one night, for chili over spaghetti for lunch, which I love. Then I think today will be a chili mac. Macaroni and cheese, with chili, a bit of ketchup, additional chili powder. Comfort food for me. We have also made a chili cheese potato lasagna casserole. Oh, my gosh, the things you can do with leftover chili are endless. Of course chili on a hotdog, or baked potato, or chili cheese dip for chips, etc.
