Meal Plan Monday

Easy week around here thanks to freezer cooking last week. What a great treat to have dinner out of the way for half the month.  I used family packs of chicken breasts, ground turkey and ground beef, approx. $30.  Most of the rest came from what we already had here and another $30 at Sprouts for produce.  The chicken breasts were separated into freezer bags with a few different marinades and for chicken stew . The Italian-Zesty chicken will go straight into the oven to bake when defrosted and be served over rice or pasta.  The other I put into a teriyaki marinade.  The first night it was grilled and then I used the leftovers for a stir fry the next night. The remaining chicken was cut into chunks and tossed into freezer bags with veggies and broth, then will be cooked in the slow cooker.  I combined the ground beef and turkey to make several meatloaves, taco filling, spaghetti sauce, chili starter mix, sloppy joe mix.  I used the remaining cooked turkey with ricotta cheese and spinach to fill some manicotti. We also made a few trays of Mexican Stuffed Shells which my kids love. I will typically make a large pot of rice which normally lasts a week and sometimes boil some eggs for salads.

Monday-Chicken Stew , Rice, Applesauce
Tuesday- Turkey Meatloaf, Mashed Potatoes, Green Beans
Wednesday- Vegetable Soup, Sandwiches & Salad 
Thursday-Spaghetti with Leftover Meatloaf 
Friday- Baked Potatoes Topped with Chessy Veggies &  Salad 
Saturday-Dinner with Friends
Sunday- Chicken Breasts on the grill, corn on the cob and fruit

I loved this post as it sounded like a little bit of prep will go a long way for easy, quick dinners. I had a question though. Do you cook the chicken before putting the marinade on and in the freezer? Or do you put the store bought meat directly into freezer bags with the marinade as soon as you bring it home? Or something else?

Thanks for the ideas!
