Really simple week here thanks to all that freezer cooking I did last month. I’m trying to make time spent in the kitchen as efficient as possible by cooking extra to use over for the next meal. On Sunday my husband cooked two whole chickens rotessori-style on the grill ($3 per chicken, 2 hours to cook) and I made a simple chicken rub with the spices we had on hand.
Monday- Meatloaf from freezer, Steam N’ Mash potatoes, frozen veggies ($4 total)
Tuesday-chicken tacos (from Sunday’s chicken), rice and salad ($3 and leftovers will make lunches this week)
Wednesday-spaghetti with meat sauce(using leftover meat loaf, crumbled), broccoli-($3)
Thursday leftovers/fridge clean out
Friday-soup, cornbread (from freezer) and sandwiches
Saturday-Tortilla pizzas made with tortillas, cheese and pepperoni, fruit salad (tortillas were free, big bag of cheese from Sam’s)
Sunday -Happy Mother’s Day! Burgers on the grill, homemade fries, Dad’s night to cook
