Bulk Cooking-Muffins and Pancakes

Yum!  Chocolate Chip Pancakes-I used the recipe on the Bisquick package and added chocolate chips and bananas.  I used the canned milk I got free with coupons.
and muffins….
Pancakes-flash freezing method.  Start with getting the pan chilled in the freezer while you are mixing and cooking, then place in layers to freeze with wax paper in between.
Put the stacks (once frozen) in a freezer bag and you are done.  What I love about this method is that we have breakfast for  a few weeks since I multiplied the recipe by 4 plus muffins to eat on the road when the mornings are hectic. Plus I used one mixing bowl for everything so clean up was a snap.  To reheat just place in microwave for about 30-45 seconds.
