
5 lb bag of Russet potatoes $.99
2 Onions, $.49 lb
a few diced celery stalks- free with Earthbound Farms $2/2 coupon
8 chicken bouillon cubes
half cup of milk- milk $1.97 per gallon at Target
3 slices of Kraft Big Slice Cheese $.75 per package at Target
pepper, parsley
garnished with croutons $.50 bag
Saute onions approx. 20-30 minutes, dice potatoes and add to crock pot with chicken cubes and 4 cups hot water. Add pepper and parsley to taste and simmer on low for 5 hours. I used a hand blender stick to puree and added the cheese slices at the end. I normally buy chicken bouillon cubes because you can get a lifetime supply at Sam’s for about $5 and I don’t have all my pantry space taken up by expensive cans of broth. This made dinner for four for two nights for about $2 per night before adding the salad. We used the fresh Express bagged salad which was free at Safeway last week and had pumpkin pie for dessert (Sara Lee $2.99, Cool Whip was free)
Since we were in the kitchen anyways, the kids and I also:
Made Egg Salad plus extra hard boiled eggs for salads
Cooked beef for stir-fry
Cooked taco meat
Cooked Italian meat and made huge pot of pasta sauce- lunch that day plus enough for another meal and leftovers/lunches
Chopped veggies (a bag of $.09 carrots and 4 onions)
After the two hour cooking session (why does it always take longer when you have help?) I think we have a good start on the meal plan for the week.
Monday- Tacos- shells for $.49 at King Sooper, cheap lettuce, will reheat taco meat and serve with salad and black beans from Target for $.29 each
Tuesday- Pasta night, sauce is already made so I will just need to cook noodles and add veggies (pasta and sauce bought at Target for $.50 each)
Wednesday- stir fry with rice made earlier in the week, meat was marked down to $2 at Safeway, rice approx $.50 lb bought in bulk, since Wednesday is my Sprouts day I will add whatever veggies I find on sale and toss in anything left in the fridge from the previous week
Thursday- Potato Soup, round two
Friday- salmon and fish sticks (fish sticks were $1 at Safeway freezer sale), Alexia potatoes ($.50 at Target), veggies
