
Monday- Italian- my husband is handling the kids sports for tonight so I can do a big dinner. I’ll brown 10 lbs of ground beef and turkey and package it up, boil two types of pasta and make up some casseroles. My “Cook Once, Eat a Bunch of Times” plan is this:
Brown ground beef/turkey- we are not fans of ground turkey so I mix some in with ground beef- both bought at Sam’s. Sam’s sells the Jenni-O ground turkey for about $7 for 5 lbs and then I’ll buy a max-pack of ground beef. Add some chopped onions. After it is browned I remove half, let cool and package for pasta sauce, “Hamburger Helper” type meals and casseroles. I add taco seasoning (bought in bulk at Sam’s) and then package that for Mexican type dishes then package and freeze. Since I’m cooking pasta anyways I plan to make up some casseroles including a pizza/pasta recipe and a baked ziti recipe using those cheap Progresso Recipe-Maker sauces and the bulk shredded cheese I buy at Sam’s. Some of the casseroles will get packaged in single serve containers for lunches.
Tuesday- my grocery ad night- Leftovers/ Clean out the fridge night
Wednesday-Veggie Soup & Bread- I’ll reserve some of the canned tomatoes and corn from the enormous cans I bought at Sam’s and add leftover beans, pasta and ground beef mix. I typically double the recipe for lunches and leftovers.
Thursday- Potato Bar & Salad- since Wednesday is my day to go to Sprouts we usually have tons of produce. Our usual recipe is a package of Green Giant cheesy vegetables plus chicken from a previous freezer cook session and salsa or chili if there is some in the fridge. I cook a few extra potatoes for lunches.
Friday- Breakfast for Dinner - scrambled eggs with cheese and pancakes- I’ll make a huge batch of pancakes and flash freeze the extras for breakfasts next week.
Saturday-Pizza Night! We have a mystery shop scheduled for a pizza shop so not only do we get free pizza, points for the bonus program but we also get a small payment for snapping a few pictures. Yay!
Saturday & Sunday lunches- We have a ton of cheese from the Kraft promotion and bread from the markdown rack so we will be having grilled cheese sandwiches with leftover soup and pasta.
Since I did the freezer cook session Monday night we should have several casseroles in the freezer and seasoned ground beef for tacos and burritos for next week. And I only have to clean up a greasy kitchen one time:)
